Ingredients
2 cups lentils (any firmer variety) cooked till tender.
2 chopped crisp green apples (1/2 cubes) Toss apples with 1 Tab lemon juice to prevent browning.
1/2 red onion finely chopped
3/4 cup creamy feta or goat cheese crumbled
1 cup chopped arugula
Vinaigrette:
1/3 cup cold pressed, extra virgin olive oil
1/4 cup apple cider vinegar
1 Tbsp. maple syrup
1 Tbsp. strong mustard
2 tsp. salt
2 tsp. pepper
1 tsp. ground cumin
1/2 tsp. turmeric
1/2 tsp. ground coriander
½ tsp ground cardamom
1/4 tsp. cayenne pepper
¼ tsp. ground cloves
1/4 tsp. freshly grated nutmeg
¼ tsp. ground cinnamon
Preparation
Cook lentils and allow them to cool to room temperature.
Mix all ingredients for vinaigrette in a jar and shake vigorously.
Toss all ingredients together in a bowl. Serve cool or at room temperature.
