Ingredients

1 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon sugar

1/2 teaspoon salt

6 tablespoons cold unsalted butter, cut into small pieces

1/2 cup sugar

3/4 teaspoon ground cinnamon

1 large apple or 2 small apples (such as Gala), cored and thinly sliced crosswise

1 cup half-and-half

2 large eggs

Preparation

Make the crust: Preheat oven to 375 degrees. Whisk flour, baking powder, sugar, and salt in a large bowl. Using your fingers, work in butter until just incorporated. Press into a 9-inch pie plate.

Make the filling: Stir sugar and cinnamon in a small bowl. Arrange apple evenly over crust, overlapping if necessary. Sprinkle with cinnamon-sugar.

Bake 15 minutes. Whisk together half-and-half and eggs. Raise oven temperature to 400 degrees. Pour egg mixture over apples. Bake until set, about 20 minutes. Let cool on a wire rack at least 1 hour.
