Ingredients

3/4 cup sugar

1/4 cup firmly packed brown sugar

2 Tablespoons flour

1/2 teaspoon cinnamon

1/8 teaspoon salt

2 pounds green tart apples,peeled, cored,and sliced(6 cups)

1/4 cup light cream

3 tablespoons butter

1 tablespoon milk

1 tablespooon sugar

Preparation

Mix together the sugars, flour, cinnamon and salt. Spread out 1/3 of apples in pastry lined pie plate. Sprinkle 1/3 of the sugar/flour/cinnamon mixture over the apples. Repeat the apple, sugar/flour/cinnamon layering two more times. Pour the cream into the center of the stack of apples in pastry. Break the butter into small pieces and dot the top of the apples with it. Place the top pastry on the pie, crimping edges and cutting slits into the pastry to allow for the steam to escape. Brush the top pastry with milk and sprinkle with white sugar. Bake @400 for 50 minutes. Cool at least one hour.
