Ingredients
2 1/2 cups all purpose flour
2 cups sugar
1/2 cup water (or fruit juice)
2 eggs at room temperature
1/2 cup shortening or unsalted butter at room temperature
1 1/2 cup applesauce
1 1/2 tsp. salt
1 12 tsp baking soda
1/4 tsp. baking powder
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp ground allspice
1 cup raisins
1/2 cup walnuts (or to taste)
Preparation
Preheat oven to 350 degrees Butter and flour two 9 x 5 x 3 inch loaf pans.
Sift together flour, sugar, salt, baking powder, baking soda and spices. Add applesauce, water and shortening. Beat 2 mins. Add eggs and beat for 2 additional minutes. Stir in raisins and walnuts. Pour into prepared pans and bake for 55 - 60 minutes, or until a finger pressed gently onto the surface leaves a depression which gradually vanishes.
