Ingredients

1 cup cold butter

1 cup sugar

1 egg

1 tbls candied ginger (chopped)

2 cups flour

1 cup apricot jam

1 cup chopped or slivered almonds

Preparation

slice butter into 8 pieces and put into food processor with sugar, egg, and ginger. Process with on/off pulse until blended.

Press 3/4 of batter into a cooking spray or buttered 9x13 pyrex dish and spread with jam, crumble remaining batter over jam and sprinkle with almonds.

Bake at 350 degrees for 20 minutes in a convection oven or 30 minutes in a regular oven until lightly browned. Cut into diamonds or squares when cool.
