Ingredients

1.2 C dried apricots, copped

2 C water

1/4 C raw honey

1.5 C rolled oats, raw

1.5 C whole wheat flour (or gluten free flour)

1/2 C walnuts, chopped

1/2 C espalier pressed oil

1/2 C raw honey

Preparation

  1. mix apricots, water and 1/4 C honey in saucepan. Bring to boil then simmer uncovered on low heat for 10 minutes.
  2. Mix oats, flour, walnuts, oil and 1/2 C honey and press half of mix into bottom of 8x8 pan.
  3. Spread apricot mix on top and sprinkle the rest of the oat mix on top.
  4. Bake 0 - 30 minutes at 350 degrees until lightly browned. Cool and cut into 16 squares.
