Ingredients

3 c dried apricots finely diced

1 t garam masala

1 1/4 c soft light brown sugar

2 c malt vinegar

1 t ginger pulp

a t salt

½ c golden raisins

2 cups water

Preparation

  1. Put all the ingredients into a medium saucepan and mix together thoroughly.
  2. Bring to boil and then turn down heat and simmer for 30 - 35 minutes stirring occasionally.
  3. When the chutney has thickened to a fairly stiff consistency, transfer into 2 - 3 clean jam jars and leave to cool. Store in Fridge.
