Ingredients

Fresh hand cut carrots(2.25" long,cut in hallf if thick-5 cups)

1/2 stick salted butter

1/3 cup brown sugar

1/3 apple(or apricot)brandy

kosher salt

fresh ground pepper

1/8 cup fresh minced ginger

Preparation

Combine butter,brown sugar & ginger in sauce pan. Bring to a very low simmer(boil)add carrots.simmer over low/med heat for 5 minutes…carrots shots be halfway way cooked. add brandy. cook for additional 5 minutes or until tender.

serve hot with sauce dripped over
