Ingredients

1 cup flour

1/4 cup sugar

2 tbs canola oil

2 tsp baking powder

1/4 tsp salt

1 lg egg

2 tbsp. skim milk

1/2 cup apricot preserves

1/4 tsp almond extract

Preparation

combine flour, sugar, baking powder & salt in med mixing bowl - beat together egg, oil, & milk - blend in preserves & extract - add to flour mixture & stir just until moist - fill muffin cups bake 20 - 30 min oruntil pick comes out clean
