Ingredients
½ cup boiling water
½ cup dried apricot
½ butter, softened
½ cup granulated sugar
2 eggs
2½ cups all-purpose flour
1 tbsp magic baking powder
½ tsp salt
½ tsp hround cloves or ginger
1 cup milk
½ cup pecans, chopped
Preparation
- Preheat oven to 350oF/180oC.
- Pour boiling water over apricots ad let them soak while you make the batter.
- Cream together the butter, sugar and eggs.
- Add the flour, baking powder, salt and cloves or ginger and mix until smooth. Drain apricots and chop coarsely.
- Add apricots, milk and pecans to batter. Spoon into a greased and floured 9" x 5" loaf pan. (Batter will be fairly stiff).
- Bake for 45 to 55 min.
