2 Shallots

2-3 Tb Port

1/2 c Chicken Broth

1/4 - 1/2 c Apricot Jam

2-4 Tb Orange/Peach/Mango juice

cook shallots chopped in butter, add port on high heat, reduce. add jam and broth and juice. reduce. add juices of meat if you have.
