Ingredients

1/2 Pound dried apricots – Calif.not Turkey

2/3 Cup superfine sugar

3 Tablespoons lemon juice

5 egg whites

Pinch salt

confectioner sugar

whipping cream

Preparation

1.Soak apricots in 1 1/2 cups water for 2 hours Add one more cup of water and cook over medium heat for 20 minutes. Mash while cooking. Puree in food processor for about 2/12 cups puree. Add sugar,stir till it disolves, add lemon juice. Chill 2.Butter 1 1/2 quart soufflé mold. Beat egg whites with some sugar till stiff. Fold into chilled puree. 3.Bake in 400 degree oven in a water bath for 30 min. 4.Sprinkle with confectioner’s sugar just before the end of cooking. 5.Serve with creme chantilly (whipped cream)
