Ingredients

15 dried apricots

1 Tbs capers

1 Tbs Dijon

1 Tbs olive oil

8 slices dark bread

butter

arugula

Talleggio cheese (or brie)

Preparation

  1. Apricots+water=boil off the heat right away +capers+mustard+oil=blender (chunky paste).

  2. Butter one side of bread. On the other side spread 2 Tbs apricot paste + arugula + cheese. Top with another slice of bread butter sie up.

  3. Fry on both sides with butter for 2 min per side
