Ingredients
Light rum
Club soda or seltzer water
Fresh mint
Sugar (optional)
Lime juice (Rosa’s Sweetened works well)
Preparation
Muddle a generous handful of fresh mint leaves into a chilled highball glass using the back of a spoon, until you can smell the leaves releasing the mint aroma. Add ice, 1 shot of light rum, 1 shot of lime juice, fill with club soda or seltzer, and optionally add 1 tsp. sugar. Stir well (esp. to dissolve the sugar).
