Ingredients
2 cups chicken broth
1 T. olive oil
1/4 t. salt
1 cup uncooked rice
1 t. oil
1 can diced green chili
1/4 cup finely chopped cilantro
Juice of two limes
Preparation
In a medium size saucepan heat up the broth and the salt to a low simmer. Add rice. Cook at a very low heat for 17 minutes. Remove from heat, put aside to rest.
After two minutes add green chili, cilantro, and lime juice. Taste test.
Fluff rice and serve
