Ingredients
For pesto:
1 cup fresh basil
1/3 cup olive oil
2 tbsp grated parmesan cheese
1 tbsp capers (drained)
1 tbsp vinegar
2 tsp Dijon mustard
1 clove garlic
Sandwich:
1 loaf french bread
1 14 oz can artichoke hearts, drained
Sliced Provolone cheese
1 tomato
2 cups torn fresh spinach
Preparation
In food processor combine Pesto ingredients, blend until smooth. Cut bread in half lengthwise, and hollow out each half, leaving about 1 inch shell. Spread basil mixture over each half. Layer sandwich ingredients.
