Ingredients

2 14oz cans Quarted Artichoke Hearts

3-4 medium sized Tomatoes- heirlooms are best

1 red pepper

1/2 red onion

3 ribs of celery

6oz of feta cheese

3 cloves of garlic, crushed and minced

1/2 cup red wine vinegar

1/4 cup olive oil

1/2 tsp ground mustard

1/4 tsp salt

1/4 tsp pepper

1/2 tsp sugar

1 tsp italian seasoning

Preparation

  1. Open cans of artichokes and drain.
  2. dice all vegtables, toss with artichokes and feta in a large bowl.
  3. Combine garlic, vinegar, and spices in a small bowl. While wisking, slowly add oil in a steady stream. Mix until combined.
  4. Pour dressing over salad and toss. Let sit for at least 1/2 hour.
