Ingredients
1 Tbsp. olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 can artichoke hearts, drained, chopped, and squeezed dry of brine
6 large eggs
1/2 tsp. dried basil
1/2 tsp. dried oregano
1 cup Parmesan cheese
cooking spray
freshly ground black pepper
Preparation
Preheat oven to 350 degrees.
Heat olive oil in a skillet, and sauté onions and garlic until onion is wilted. Add artichoke hearts and heat through. Set aside to cool slightly.
Beat eggs with basil and oregano. Add cooled vegetables and Parmesan. Stir.
Pour into quiche dish coated with cooking spray. Generously top with freshly ground pepper.
Bake at 350 for about 30 minutes, or until toothpick inserted in center comes out dry.
