Ingredients

2 - 6.5 oz jars marinated artichokes, drained and chopped

1 box frozen chopped spinach, thawed & squeezed dry

1/2 c. mayo

1/2 c. sour cream

1 c. grated parmesan

2 c. shredded Monterey jack + 1/4 c. for topping

3 medium cloves garlic, minced

1/2 onion, chopped finely

Preparation

Preheat oven to 350.

Combine everything except 1/4 c. jack in quart-sized baking dish. Sprinkle remaining jack on top.

Bake approximately 1 hour or until cheese is brown & bubbly.
