Ingredients
Put half the oil in a large deep saucepan with the onions and carrots. Place the cleaned artichokes on top
upright
season with salt & pepper. Sprinkle with the remaining oil. Cover the pan and place over low heat. Shake the pan from time to time. When the onions and carrots begin to brown
moisten them with white wine and cook uncovered until the wine has reduced by half. Add garlic and a few tablespoons of water
cover and simmer over low heat until artichokes are tender - approx. 45 minutes. Serve artichokes with the juices poured over them.
