VINAIGRETTE

5 oz fresh figs (6 large), stemmed & quartered

1/2 c water

1 T fresh lemon juice

1 T balsamic vinegar

1 T white wine vinegar

2 t chopped fresh basil

Generous pinch sugar

2 T extra virgin olive oil

SALAD

8 1/2-inch-thick rounds of goat cheese

1 egg, beaten to blend

1 cup panko

1 T extra virgin olive oil

10 C packed arugula

3 oz thinly sliced prosciutto

8 fresh figs, stemmed & halved

For vinaigrette - combine figs and 1/2 water in medium saucepan. Can’t find the rest of the recipe but I’m sure you can figure it out! :)
