Ingredients

1/2 pound (5 cups) arugula, stems trimmed

1/3 cup Parmesan, shaved into thin slivers

1-2 tablespoons balsamic vinegar

2 tablespoons olive oil (optional)

freshly ground pepper to taste

Preparation

Combine arugula and Parmesan. Toss with balsamic, olive oil if desired, and pepper and serve.
