Ingredients

1/4 cup extra-virgin olive oil

2 tbsp. fresh lemon juice

salt and freshly ground black pepper

6 oz arugula leaves

1 avocado chopped

1 med tomato chopped

2 hearts of palm chopped

1/3 cup pine nuts, toasted

2 tbs grated parmesan cheese

Preparation

  1. in a small bowl whisk together oil and lemon juice to make dressing. add salt and pepper to taste. set aside.

  2. in a large salad bowl combine arugula, avocado, tomato, and hearts of palm. toss w/ dressing. top w/ pine nuts and cheese.
