Ingredients

FOR VINAIGRETTE:

2 tbsp red wine vinegar

Kosher salt & pepper

Dried Oregano

1 tsp chopped fresh basil

1/2 tsp finely chopped garlic

6 tbsp extra virgin olive oil

FOR SALAD:

2 bunches arugula leaves, washed and drained

4 radishes, washed, ends trimmed and sliced thin

1/2 c shaved parmesan cheese

1/4 c toasted pinenuts

Preparation

  1. In a mixing bowl, wisk together all the vinaigrette ingredients except the olive oil. Slowly pour in the olive oil while whisking until it is fully incorporated.

  2. Add the arugula and radishes to a salad bowl and toss well with enough vinaigrette to coat evenly.

Variation: Goat cheese & hazelnuts.
