Ingredients
1 tin chick peas
1 tin whole sweetcorn
1 tin lentils (any colour)
1 tin coconut milk (low fat)
1 medium onion chopped finely
1/2 tsp medium curry powder or paste
1/2 tsp fresh grated ginger
Ground pepper and salt
Preparation
Fry onions in heavy pan with a little oilve oil medium heat till opaque. Add curry stir couple seconds. Add chickpeas sweetcorn, lentils and coconut milk including all liquid in tins. Stir bring to the boil. Grate about half teaspoon fresh ginger. Take off and whizz to your liking. Add ground pepper and salt.
