Ingredients
1/2 cup of fat free mayo
1 tbsp of soy sauce
1 tsp ginger root, grated
1 lb cooked skinless chicken breast, shredded
1/2 cup snow peas, cut in half
1/2 cup sweet red pepper, diced
1/2 cup carrots, shredded
1/2 cup scallions, sliced
4 pieces of bib lettuce
Preparation
Mix mayo, soy sauce and ginger. Add the chicken and veggies and mix to coat. Serve on the lettuce. Serve with rice.
