Ingredients
1 cup tightly packed cilantro
1/3 cup unsalted roasted peanuts
1 small green chile, deseeded and roughly chopped
1 clove garlic, roughly chopped
1 tsp finely grated fresh ginger
2 tbsp. freshly squeezed lime juice
1 tbsp fish sauce
1/2 tbsp brown sugar
1/2 tsp salt
1/3 cup peanut oil
Preparation
In a food processor or blender, combine all ingredients except peanut oil and process slowly pouring the peanut oil into the mix. Process until the ingredients turn into a smooth paste.
