Ingredients

3 cups vegetable broth

1 tbsp ponzu sauce

1/4 cup green onions, minced

3 tbsp fresh ginger, minced

1 tbsp crushed garlic

8 oz firm tofu, cubed

3 stalks bok choy, sliced

Preparation

Bring vegetable broth to boil in large pot. Add ponzu sauce, green onions, ginger and garlic. Reduce heat, cover, and simmer 5 minutes. Add tofu and bok choy, cover and simmer 5 more minutes.
