Ingredients
1 cup dry whole wheat macaroni pasta (also delicious with rice noodles)
1 cup fresh spinach
1/4 cup diced onion
1 cup shredded carrots
3 tbsp grated ginger
1 cup sprouts
3 tbsp low sodium soy sauce
3 tbsp honey or maple syrup
1 tbsp toasted sesame seeds
2 tbsp fresh lime juice
dash cayenne pepper
2 tbsp sesame oil
Preparation
- cook pasta according to package directions
- heat oil in skillet, add onions and carrots and saute until tender. add garlic, ginger, and sprouts and saute another minute.
- toss together veggie saute, spinach, and pasta. hot pasta will cause spinach to wilt.
- combine remaining ingredients and dress pasta. serve chilled.
