Ingredients

1 cup dry whole wheat macaroni pasta (also delicious with rice noodles)

1 cup fresh spinach

1/4 cup diced onion

1 cup shredded carrots

3 tbsp grated ginger

1 cup sprouts

3 tbsp low sodium soy sauce

3 tbsp honey or maple syrup

1 tbsp toasted sesame seeds

2 tbsp fresh lime juice

dash cayenne pepper

2 tbsp sesame oil

Preparation

  1. cook pasta according to package directions
  2. heat oil in skillet, add onions and carrots and saute until tender. add garlic, ginger, and sprouts and saute another minute.
  3. toss together veggie saute, spinach, and pasta. hot pasta will cause spinach to wilt.
  4. combine remaining ingredients and dress pasta. serve chilled.
