Ingredients

Dressing

1 T low-sodium soy sauce

3 T peanut butter

2 T hoisin sauce

4 T hot water

2 T lime juice

1 t hot sauce

Noodle Salad

1 package (8.8 oz.) soba noodles

1 c 2-inch-long thinly sliced zucchini spears

1 c matchstick - cut - carrots

1 c thinly sliced red bell pepper

1 c snow peas, ends trimmed

1/2 c chopped scallions, green parts only

1/2 c bean sprouts

1/2 c chopped cilantro

Preparation

In a blender, puree dressing ingredients until smooth. If mixture is too thick, thin with hot water, adding 1 t at a time.

In medium pot, cook noodles in boiling water until tender about 5 min. About 30 sec. before removing noodles and zucchini and carrots. Drain rinse briefly in cold water and drain again.

Place in large bowl. Add pepper, snow peas and scallions. Pour dressing over mixture & toss.

Garnish with sprouts and cilantro
