Ingredients

4 c baby spinach

1 c. cooked rice (basmati tastes best)

1 c bean sprouts

1/2 c toasted sliced almonds

1 c. mushrooms sliced if large

1/2 c olive oil

3 tbsp soya sauce

1 garlic clove grated

Preparation

Mix first 5 ingredients together in a large bowl. The last 3 ingredients mix together and let sit until ready to serve the salad.
