Ingredients

1 lb. uncooked shrimp - peeled & deveined

1/2 lb. bacon

1 cup fresh snow peas

1 8 oz. can sliced water chestnuts

Marinade:

1/4 cup olive oil

1/4 cup soy sauce

2 tbsp. light brown sugar

1 tbsp. lemon juice

1 tbsp. Dijon mustard

1 tbsp. minced garlic

Preparation

Mix all ingredients for marinade & set aside

Cut bacon slices in half

Wrap 1 uncooked shrimp, 1 snow pea, and 1 slice of water chestnut in 1/2 slice of bacon and secure with toothpick.

Continue until all shrimp are assembled & place them in a shallow dish

Pour marinade over shrimp, cover & refrigerate 6 hours to overnight, turning once if necessary

Remove shrimp wraps from marinade and place on a foil lined baking sheet

Bake at 450° for 8 - 10 minutes, turn & continue baking 3-5 minutes or until bacon is cooked on opposite side
