cups frozen sugar snap peas

lb. smoked turkey (from deli), cut into thin bite-sized strips

cups shredded Chinese (napa) cabbage

1/2

cup shredded carrot

1/2

small red onion, halved, thinly sliced (about 3/4 cup)

(3-oz.) pkg. oriental-flavor ramen noodle soup mix

Seasoning packet from ramen noodle soup mix

1/4

cup sugar

1/4

cup rice vinegar

2

tablespoons oil

Preparation

Cook sugar snap peas in microwave as directed on package. Drain; rinse with cold water to cool.

Meanwhile, in large bowl, combine turkey, cabbage, carrot and onion; mix well. Reserve seasoning packet from soup mix for dressing. Break noodles from soup mix into pieces; add to salad.

In small bowl, combine contents of seasoning packet with all remaining dressing ingredients; blend well.

Add sugar snap peas and dressing to salad; toss gently to coat.
