cup citrus vinaigrette

1/4

cup teriyaki marinade and sauce (from 10-oz bottle)

lb cut-up beef for stir-fry

package (3 oz) Oriental-flavor ramen noodle soup mix

bag (10 oz) romaine and leaf lettuce mix

1

cup fresh snow pea pods, strings removed

1/2

cup julienne-cut carrots (from 10-oz bag)

1

can (11 oz) mandarin orange segments, drained

Preparation

In small bowl, mix citrus vinaigrette and teriyaki marinade; set aside.

Spray 12-inch skillet with cooking spray; heat over medium-high heat. Place beef in skillet; sprinkle with 1 teaspoon seasoning from soup mix. (Discard remaining seasoning packet.) Cook beef 4 to 6 minutes, stirring occasionally, until brown. Stir in 1 tablespoon of the vinaigrette mixture.

Into large bowl, break block of noodles into small pieces. Add lettuce, pea pods, carrots and orange segments. Add remaining vinaigrette mixture; toss until well coated. Divide mixture among 6 plates; top with beef.
