Ingredients
1 head cabbage, shredded
1 medium red onion, finely sliced
1 cup shredded carrot
1/2 cup cilantro, roughly chopped
For dressing:
2 Tablespoons rice vinegar
2 Tablespoons lime juice
2 Tablespoons light soy sauce
1 clove garlic finely minced
1/2 teaspoon minced fresh ginger
1 Tablespoon peanut oil
1/2 cup chopped toasted peanuts
salt and pepper to taste
Preparation
Place all vegetables in a large salad bowl (not metal). Put aside. In a glass mixing bowl, put in vinegar, lime juice, soy sauce, garlic and ginger. Mix in well. Slowly incorporate the peanut oil while whisking the mixture. Pour over the cabbage and toss well. Mix in the chopped peanuts. Add salt and pepper to taste.
