Ingredients
8 ounces cooked chicken, chopped
½ cup carrots, shredded
¼ cup onion, thinly sliced
24 seedless grapes, cut into halves
6 tablespoons pecans, toasted
For Dressing:
½ cup mayonnaise
½ cup sour cream
2 t curry powder or more to taste
3 T mango chutney
¼ cup scallions, finely minced
1 t salt
½ t black pepper
1 head Boston lettuce, cleaned and chopped
Preparation
Mix dressing ingredients in a bowl.
Toss chicken, carrots, onion, grapes, pecans and chopped lettuce in a salad bowl. Add dressing and mix together.
