Ingredients
1 gallina (hen) approx 6 pounds, washed and cut in pieces (wings, 2 breasts, 2 legs, 2 thighs)
Sprinked generously with:
Adobo
Mexican Oregano (ground Oregano)
Juice of 2 limes
Sprinkling of Worcestershire sauce
Sofrito:
1-2 red onions
Lots of sweet peppers (2-3 cups chopped, any color)
1.5 t Mexican oregano (ground oregano)
1-1.5 cups white wine (any will do)
1.5 bulbs garlic (12-16 cloves, peeled)
1 T.Adobo
LOTS of cilantro (up to full bunch, depending on what you have and size of bunch - really can’t have too much in my opinon) - traditionally, sofrito uses cilantro recao - it’s a bit hard to find so I usually use cilantro)
3 T vinegar (cider or white)
3 T Worchestershire sauce
1.5 T. olive oil
Hot pepper to taste (could use drops of tabsco - I use a dried pepper (e.g. 1 large dried ancho chile), cut up
