Ingredients
1 lb Asparagus Scraps
1 Onion, chopped
2 Garlic Cloves, chopped
1 Qt Chicken stock
1/4 C Heavy Cream
Salt
White Pepper
Dash of Cumin
Preparation
Saute onion and garlic cloves in a little bit of oil till very soft. Add asparagus scraps and chick stock and boil for about 30 minutes. Purée the crap out of it. Strain into a smaller pot. Add heavy cream, salt, white pepper, a dash of cumin. If it is not thick enough add roux.
