Ingredients
1/2 lb. asparagus
1t Extra V. Olive Oil
3/4 c. grape tomatoes halved
1/4 t minced garlic
1/4 t black pepper
1 1/2T T crumbled Goat Cheese (opt)
Preparation
Cook asparagus in boiling water for 2-3 mins (until crisp-tender). Drain Heat olive oil in large skilled over med-high heat. Add tomatoes and garlic, cook 5 mins. Stir in vinegar, cook 3 mins. Stir in salt. Arrange asparagus on platter; top w/tomato mixture. Sprinkle w/cheese and pepper.
