Ingredients
5 red potatoes, diced, cooked
4 T. butter
4 T. flour
2 C. half and half
salt and pepper, to taste
2 C. grated cheddar cheese
Parmesan Cheese
Preparation
Peel potatoes and cut into quarters. Place in water to cover and cook for 20-25 min. until tender. Melt butter in 2 qt. saucepan. Add flour and stir over low heat. Gradually add half and half, stirring constantly. Add cheddar cheese and stir until blended. Season with salt and pepper. Put diced potatoes into 2 qt. casserole and top with sauce and Parmesan cheese. Bake at 350 degrees about 30 min. until cheese has melted and potatoes have a crust on top.
