Ingredients
Crepe Batter
1cup or 150gm flour
salt
3Tbs(40g) sugar
3 eggs
3Tbsp(4cl) oil
1 1/2 cup(3.75dl) milk
3Tbsp(40g) butter
rum –optional
Preparation
Sift flour into a large bowl and make a well in the center,add salt,sugar,oil eggs and half of the milk and whisk together. When incorporated beat vigorously until smooth and add the rest of the milk.Strain into another bowl and put aside. Heat the butter until brown add rum if using and whisk into the batter. Cook on very hot pan with a little oil or butter about 2 minutes/side
Fill with pastry cream and diced tropical fruits
