Ingredients
One lb spaghetti noodles
1 head of garlic (not a clove; a head)
1 inch piece of fresh ginger
1 tbs salt
1/2 c. rice wine vinegar
1/4 c. peanut oil
1 - 2 tsp red pepper flakes
1 tsp Szechuan peppercorns (optional)
5 tbsp tahini (Sesame paste)
1 c. soy sauce
2 tsp sugar
1 bunch green onions, tops chopped for the scallions
Preparation
Boil spaghetti noodles in large pot. Stir well to not stick. Grind garlic, ginger salt together in bowl or blender. Put into LARGE bowl, along with vinegar, soy sauce, pepper flakes, sugar and peanut oil. Add noodles to stuff in large bowl. Add tahini and and most of the scallions and mix very well. Save some scallions as garnish for the day of.
