Ingredients
3 lbs. yellow summer squash
½ cup chopped onion
½ cup cracker meal or bread crumbs (I use Progresso Italian bread crumbs).
½ tsp. Black pepper
½ tsp. Salt (Salt and pepper may be increased to suit taste).
2 eggs
1 stick of butter
3 tbsp. Sugar
Preparation
Wash and cut up squash. Boil squash and onion together until tender, drain thoroughly, then mash. Add all ingredients except ½ of the butter to squash. Melt remaining butter. Pour mixture in baking dish, then spread melted butter over top and sprinkle with cracker meal or bread crumbs. Bake in 375 oven for approximately one hour or until brown on top.
