Ingredients

6-8 medium white or red skinned potatoes

3 TBSP. Italian dressing

2 cups sour cream

1/2 cup mayonnaise

3/4 cup sliced black olives

4-6 scallions, sliced, including the green

salt and pepper to taste

Preparation

Put potatoes in large pot, cover with cold salted water, bring to a boil, then reduce to simmer and cook until just knife tender. Drain potatoes. While still warm, peel (if desired) and cut into 1/2 inch cubes, or just slice. Pour Italian dressing over them and set aside for about an hour. In large bowl, mix together sour cream and mayo, add olives, green onions, and potatoes. Fold together, and add salt and pepper to taste. Chill before serving.
