Ingredients
1 1/2 c. chopped fresh pineapple
1/4 c. chopped red onion
3 Tbls. freshly squeezed lemon juice
1/2 - 1 tsp. chopped jalapeno pepper
1 tsp. grated fresh ginger root
1 Tbls. chopped fresh mint
6 Tbls. butter
1/3 c. honey
1/3 c. brown sugar
Bottled hot sauce
6 salmon filets
Preparation
- Combine pineapple, red onion, ginger, mint and 1 tablespoon lemon juice. Add jalapeno pepper to taste. Mix well and refrigerate for at least 4 hours.
- In a small saucepan, melt butter, then add the honey, brown sugar, remaining 2 tablespoons lemon juice, and hot sauce to taste. Heat over low heat until sugar melts. Set aside to cool.
- Place salmon in plastic bag. Add marinade. Remove as much air as possible from plastic bag and seal. Marinate salmon for 30 minutes.
- Grill or broil salmon 2 - 3 minutes on each side to desired doneness. Serve along with pinapple salsa.
