Ingredients

1 cup all-purpose flour

¾ cup sugar

2 ½ cups desiccated (finely shredded) coconut

1/2 cup butter, melted

5 medium Golden Delicious apples, peeled, cored and sliced

3 eggs

1 tsp ground cinnamon

Preparation

  1. Preheat oven to 350°F. Grease a 7 x 11" pan well.
  2. Combine flour, ½ cup sugar, ½ cup coconut and butter in a medium bowl and mix well to combine. Press mixture evenly over pan base. Bake for 12 minutes or until light golden.
  3. Meanwhile, place apples into a large microwave-safe dish. Cover with a lid or plastic wrap and cook for 5 minutes on High/100% or until almost tender but still holding their shape. Remove cover, drain excess moisture and set aside to cool for 5 minutes.
  4. Combine remaining sugar, coconut, and eggs in a medium bowl.
  5. Spoon apples over warm crust and sprinkle with cinnamon. Spread coconut mixture over apples, pressing down firmly. Bake for 20-25 minutes or until golden. Set aside to cool in pan. Slice and serve.
