Ingredients

CRUST

1 c. graham cracker crumbs

½ c, finely chopped pecans

3 T. sugar

½ t. ground cinnamon

¼ c. (½ stick) butter (melted)

FILLING

2 8 oz pkgs. Cream cheese

½ c. sugar

2 eggs

½ t. vanilla

4 c. thin peeled apples slices (an apple peeler/corer makes this a cinch)

1/3 c. sugar

½ t. ground cinnamon

¼ c. chopped pecans

Preparation

Preparation:

CRUST: Heat oven to 350° F

Mix crumbs, pecans sugar, cinnamon, and butter: press onto bottom of 9" springform pan. Bake 10 minutes.

Filling: Beat cream cheese and ½ c. sugar at medium speed with electric mixer (Easier with food processor) Add eggs, 1 at a time. Add vanilla and process until smooth. Pour onto crust.

Mix apples, sugar and cinnamon together. Lay apple slices over cream cheese filling. Sprinkle pecans on top. Place in the oven for 1 hr. 10 minutes.

Loosen cake from rim of pan. Cool before removing rim. Refrigerate 3 hours.
