Ingredients

BASE

½ cup butter

1/3 cup sugar

1 cup all-purpose flour

FILLING

3 pears (preferably barlett or bosc)

2 apples

4 oz. Cream cheese

½ cup sugar

2 eggs

¾ xup milk

½ tsp pure vanilla extract

½ tsp cinnamon

¼ cup sliced almonds

Preparation

  1. For the shortbread base, cream butter and sugar together until light. Beat in flour. Pat into the bottom and up to the slides of a 10" pie dish.
  2. Peel, halve and core pears and apples. Slice. Place in crust, pilling the fruit slightly higher in the centre.
  3. Cream cheese until smooth. Beat in sugar. Add eggs one at a time, beating mixture smooth after each addition. Add milk and vanilla. Pour over fruit. Sprinkle with cinnamon and almonds.
  4. Place in a preheated 425o F (210o C) oven and bake 10 minutes. Reduce heat to 350o F (180o C) and bake 35 to 40 minutes longer or until custard is set in the centre. Delicious warm or cold.
