Ingredients
2 c potatoes, diced
1 c celeriac, diced
1 tbsp butter
1 small red onion
2 garlic cloves
1/2 bell pepper diced
1 celery stalk, sliced
1 c butternut squash, diced or shredded
1 lb extra lean ground beef or veal
1.5 c corn kernels
salt and ground pepper
1/4 c milk
2 tbsp fresh parsley
1.5 c creamy Dofino Havarti
Preparation
- Boil potatoes and celeriac until tender
- in large skillet - melt butter and saute butter, onion,garlic pepper, celery and squash for 3-4 min
- Add meat
- Mix in corn and season
- Transfer to an oven-safe dish
- Mash potatoes and celeraic with milk butter and seasonings
- Spread mashed potatoes over mixture and top with cheese
- Bake in oven for 20 min at 375 C
