Ingredients

4 ears fresh yellow corn

1 med tomato, chopped

1 Jalapeno pepper, seeded ,chopped

1/4 fresh celantro

1/4 cup white vinegar

2 tbs. lime juice

1 Large avacado

1/2 tsp. salt

1/4/cup chopped red bell pepper

3/4 cup water

1/4 cup chopped red bell pepper

Preparation

cut corn kernels from cob into a sacepan. Add water and bring to a boil. Cover, reduce heat and simmer 6 to 7 minutes. Drain and place in bowl. Stir in tomato and remaining ingredients. Cover and chill for 8 hours. Great with chicken of fish.
